I know this isn’t anything out of the ordinary.. but it is one of my most favorites. Veggies like this are essentially a “treat” at dinner time for me 🙂 I use to make this for my meal in high school. I would sneak up to my room and eat in peace. Healthy food makes you feel so fab. I wish these were from my garden but either way, tastes so great.
2 yellow squash
2 zucchini squash
Parmesan cheese (fresh or in the can)
1- chop, boil and strain veggies (boil for about 8-10 min)
2- while still hot, layer butter spray, cheese and a little salt
repeat with each layer.
