Weight Watchers Pumpkin Muffins

If you have not made these in either cookie form or as muffins… you are missing out!  My cute friend Ashley Connors brought these to me last year and I have been making them ever since.  I promise they will be your new obsession as well.
They don’t require eggs, oil or butter.  Only two simple ingredients…  spice cake mix and pumpkin.
 The texture is incredibly moist and satisfying.  Love that I don’t feel totally guilty if I accidentally have more than one,two or three.?  🙂  As you can tell, I loaded these with chocolate chips.  You can put in mini chocolate chips, dark chocolate chips, white chips or even leave them out.  Just the smell of these baking in the oven is enough goodness for me 🙂
My favorite part is that they make 24 giant sized muffins.   Enough to share with a friend and still have some for you and your family to enjoy.  They are great frozen as well.  I bet you could add a scoop or two of protein powder to them.  Haven’t tried that one yet… let me know if you do 🙂
INGREDIENTS:
  • two boxes spice cake mix (Betty Crocker or Dunkin Hines)
  • 1 20oz pumpkin (not pumpkin pie filler)
  • *if you only wanted to make half you could do one box cake mix and one small (15oz) can of pumpkin
DIRECTIONS:
1- beat pumpkin with the two spice cake mixes until well blended
2- stir in your choice of chocolate chips. (about 2 cups or so) I use milk chocolate
3- pour into muffin tins either with the liner or sprayed..
4- bake at 350 for 18-22 min
*don’t forget to load those babies up! I use a 1/2 cup measure to plop them in
