Salmon Salad

Hello Salmon.  This was another leftover protein that I turned into mouth watering delish.  If you can keep fresh meat of every kind throughout the week, then you are more likely to make healthy meal selections in the “heat of the moment.”  This took me two minutes to prepare.  It’s also a perfect on-the-go meal if you need to pack it for later.INGREDIENTS:

  • two hand fulls spinach
  • one hand full of cherry tomatoes
  • salmon (hot or cold)
  • Newman’s light balsamic dressing
  • sesame seeds
