Pork Quesadillas

 Crock Pot time baby!!!  I am so in love with that thing…  It has a place in my heart that nothing can come close to.  Four simple ingredients and you have mouth watering food.  This quesadilla is easily compared to Cafe Rio Pork quesadilla.  I don’t know their secret recipe, and I think they cook with Coke (beverage) but give it a whirl.
 I got this recipe from my sister in law Mary Kimball.   I loved it and so did my family.  The two cups of brown sugar stressed me out but then I realized that I probably eat that in a whole pack of candy corns. (simple pleasures people and yes, I eat them all year round)!   If you are cooking with sugar every night that is obviously not recommended, but something like this once in a while is quite tasty if I do say so myself!
INGREDIENTS:
  • 1 pork loin roast
  • 2 cups salsa (I used private selection cheap kind)
  • 2 cups brown sugar
  • uncooked flour tortillas
DIRECTIONS:
1- place pork roast in a crock pot
2- combine salsa and brown sugar, pour over roast and cook 8 hours on low
3- shred and serve with tortillas,shredded cheese, pineapple tidbits, lettuce,guacamole,sour cream etc

  1. Hey Gorgeous! I made a similar thing a few weeks ago, but instead of sugar I used DIET CREME SODA. And added some Creme Soda Extract for amped up flavor. I was thinking I had you taste it?

    Anyway…good stuff in the crockpot for sure.
