Lemon Poppyseed Vinaigrette Salad

YUM YUM &YUM!!!! I found this vinaigrette off of the “Best Bites” blog. I love to come up with different salad tastes. I have a really hard time just making a simple salad. Whenever I get invited somewhere, I feel like they have put so much effort and $ into the meal. Not to mention, my whole family gets to eat till their hearts delight.  I threw all of these ingredients together and it was very well received 🙂   I always try to make something more fancy than just what I would serve on your typical Tuesday night for dinner.
The lemon freshness of this dressing is unlike any other. Well, that’s not true… someone told me that it tasted like one from Plates and Palates that had shrimp and pistachio nuts in it. Anywho, with all of that said- TRY IT!
  I mixed Romain lettuce and spinach because I feel like when you add so many ingredients to a spinach salad it just weighs the leaves down too much.  The Romain broke it up and gave it perfect texture- twist  I added fresh sliced peaches in at the very last minute and it was not only beautiful but  FABTABULOUS* (and yes that is a word… my word!)
LEMON POPPY SEED VINAIGRETTE:
  •  5 large lemons (use as needed-you’ll need 2/3 cup juice and 2 tsp zest)  If you don’t know what zest is, it means very finely grating the lemon rind…  btw, You will have to put some elbow grease into this 🙂
  • 1/2 cup rice wine vinegar (I used rice vinegar)
  • 1/2 cup canola oil
  • 1 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup sugar
  • 4 teaspoon poppy seeds
  • 2 teaspoon grated yellow onion
  • 2 cloves finely pressed garlic
~Shake the above ingredients vigorously.  If possible, refrigerate at least an hour before serving.  Shake well before serving.
INGREDIENTS:
  • 2 heads of Romain lettuce
  • 1 20oz bag spinach
  • 3/4 bag of Parmesan cheese
  • 2 cups  thinly sliced almonds
  • 1/2 cup sugar
  • 2 avocados
  • small bunch strawberries
  • 2 peaches
DIRECTIONS:
  1. caramelize your almonds with 1/2 cup sugar (I just put the skillet on medium high heat and throw in the sugar with nuts on top and stir when it starts to heat.  Make sure not to burn!!! It happens fast)
  2.  clean Romain lettuce and layer every other row in the salad bowl with Romain and spinach
  3. add almonds,cheese,strawberries
note:  add vinaigrette to the salad and toss well.  Just before serving put avocado and peaches in… so that they don’t get too smashed.  We are going for the pretty look right 🙂
p.s. I made this quantity for 14 adults and 16 kiddos so you can obviously cut the recipe in half.  Don’t just pour the entire dressing over your salad.  See how much saturation it needs as you toss. xo
