Chicken Salad Croissant Sandwiches

Who doesn’t enjoy the traditional croissant sandwich?  I love things like this for dinner, baseball games, picnics, school lunch or whatever the flip you can think of.
 Ok… I will confess, I found this chicken salad at Costco.   Most everything there is superb. This can be a little bit spendy, but goes a very long way.  (two nights for sure)  You should give it a try.  I find myself desperate for something delish and fast, often.
INGREDIENTS:
  • 1 container chicken salad (made with rotisserie chicken) from Costco. You do not need a big one. Find the smallest one because it will last for days and be cheaper.
  • 1 bunch of red seedless grapes
  • 1 dozen croissant sandwiches ( I like the big ones from Smiths)
  • lettuce and/or tomato if desired
DIRECTIONS:
1- Simply add cut up grapes to chicken salad and mix. I also like to sprinkle the seasoning ‘dill into the salad for extra flavor.
2- place lettuce onto cut open croissant
3- scoop salad firmly onto roll

  1. I **LOVE** the chicken salad sold at Costco! I buy the Cape Cod Chicken Salad, though, not the stuff they make in the deli. But this sandwich sure does look super yummy!
