Chicken Cheese Chowder

 Every time I trek across town to my parents house, my sweet momma always has something wonderful brewing.  She made this deliciousness when I stopped in last month.  Yes- melt in your mouth, Yes- kid friendly, Yes- easy as pie. It’s pretty healthy and has oodles of protein!  I love to make soup, especially during the cold winter months.  This is a great switch up from all of the traditional soups that we always turn to.  Give it a whirl…

INGREDIENTS:
  • 4 half chicken breasts cooked (20 min boiled or use rotisserie chicken)
  • 1/2 cup carrots, coarsely grated
  • 1/2 cup celery, chopped
  • 3/4 cup water, boiling
  • 1/4 cup onion, chopped
  • 3 Tablespoons butter
  • 1/4 cup flour
  • 2 cups milk
  • 13 1/2 ounces chicken broth
  •  1 1/2 cups medium sharp cheese (or sharp) shredded
  • parsley, snipped (optional)
DIRECTIONS:
1- cook vegetables in 3/4 cup water until tender (approximately 20 minutes or more)
2- cook onion in butter until tender (clear and tender-don’t burn)
3-stir in flour gradually, it gets absorbed by the butter and becomes a paste.  Be careful not to burn the onions or butter
4- add milk slowly, cook, stirring until thickened.  Be patient and give it some time..don’t let it burn
5- once rue is thickened, add broth, cheese, chicken (shredded) and vegetables with their cooking liquid
6- stir until cheese is melted
7- top with snipped parsley if desired
*I added chicken bullion granules to my soup because I wanted to intensify the flavor 🙂 xo
