Avocado Pita

This pita is superb. I am obsessed healthy and fresh. I know I say this in every post, but Cmon!! I can’t get over it. I am so excited for all of the veggies that I will be eating out of my garden this summer. My mind is constantly racing with recipe ideas. I loved this Pita. the only thing I would change, Is I would wrap it into a tortilla instead. I liked the flavor of it better. Once again, this is perfect for the pool or a picnic. Gotta love me for my yummy lunch ideas RIGHT? I found this recipe in the “Peacocks On My Porch” cook book. And yes, I made it so Shantastic!

INGREDIENTS:

  • 1 cup sugar (I used Splenda)
  • 1 tsp salt
  • 1 tsp dry mustard
  • 1/2 cup canola oil
  • 1/2 cup red wine vinegar
  • 1/2 small onion, chopped. (I used a yellow one because that is what I had, but a red one would be fab too. I don’t love the lingering onion taste so I used about 1/3 of an onion)
  • 1/2 cup sugar snap peas (I had them in my fridge and love the added crunch)
  • *Mix all ingredients well

PITA:

 2 head iceberg lettuce
4 avocados, diced
4-5 chicken breasts, grilled and diced ( I bought mine already grilled at Smith’s)
1 green onion, chopped
1 each- green pepper and red pepper sliced into long thin strips
tomato and cucumber (optional)
1 pkg. pita bread

*Mix with dressing and stuff pita pockets or tortillas

~Note- This can be cut in half.  That is what I did when I made it for my family. Hope you love.
