Yummy Vegetable Dish

Who doesn’t want to take a super fabulous vegetable dish to a get together or even better serve within your own home!! My sister Ashley brought this to a family event a few years ago and I Love it. Whenever I get invited somewhere I always want to bring something to contribute, but not very often do I feel totally confident in saying “I’ll bring a hot vegetable dish”. I took this to my in laws on Christmas Eve and it was a hit! The fresh carrots and broccoli along with all the fresh seasoning and crunchy Ritz cracker on top is honestly the perfect combination. My kids loved it and I like to have it as a reheat for the week for lunch or whatever.
  • 5 large carrots or one medium sized bag of mini carrots
  • 3 heads of fresh broccoli
  • 1/2 yellow onion chopped
  • 2 Tablespoons butter
  • 1/4 cup Mayonnaise (I use light)
  • 1 can Cream of Mushroom soup
  • 1 cup grated cheddar cheese
  • 1/4 cup milk
  • 1 egg already beaten
  • Salt and pepper to taste
  • 1/4 cup cracker crumbs of your choice (I like Ritz) and I usually use a whole sleeve
1-Chop carrots and chop the stems off of the broccoli2-Boil separately Broccoli florets and chopped carrots until tender
3- Microwave 1/2 onion chopped with 2 Tablespoons butter until melted
4-Mix melted onion,mayonnaise,soup,1/4 cup milk,1 egg (already beaten) and 1 cup Cheddar cheese
5- Add cooked veggies and mix gently (This is usually when I sprinkle on some salt before I cook it and make sure that it is creamy. If it’s too dry it wont be as great.  Just mix in the veggies slow and decide)
6- Pour into lightly greased baking dish
7- Sprinkle smashed cracker crumbs on top
8- Bake at 350 for 35-40 minutes (I put foil on to begin with and take it off about half way)
