Shannon Salad

I am in love with this salad, my friends! We were having enchiladas one night for dinner and I needed a delicious salad to go along with them. So I made this up while shopping at the store and it is pretty super fabulous. Fresh is the name of my game!

I love to keep fresh salad ingredients in a zip lock container in my fridge that I can eat for lunch for days in a row. It is the perfect food-fix during my day.

INGREDIENTS:
  • 2 heads of red leaf lettuce (my absolute most favorite)
  • 4 green onions sliced
  • 7 hard boiled eggs with the yolk taken out and sliced
  • 1 1/3 cup sliced sugar snap peas
  • 1 large cucumber peeled and sliced
  • 1 large yellow or orange pepper sliced
  • 1 bunch grape tomatoes sliced in half
  • 1 Tablespoon sesame seeds
  • 1/2 cup fresh Parmesan cheese
  • Chicken would be a great addition to this if it isn’t going along with a meal
(the above amount would be considered for a large crowd.  You can modify if making it for yourself or small family)
Simply toss all ingredients together and set out dressings for options. My personal favorite is Newman’s Balsamic Dressing mixed with Kraft’s roasted red pepper dressing.
I can hardly stand looking at this. I will be at the store first thing to get all of this tomorrow and for the rest of the week to eat.

  1. But the real question is if you like this better than the beet salad I made for Christmas Eve years ago… I’ll never forget you coming over in the morning for breakfast / brunch and eating it again for breakfast! Whenever I make it I think of you, sweet girl!
