This is my latest obsession… I eat rotisserie chicken almost every day of the week. I’ve been buying more than one from Costco and just freezing them so that I never run out. I know how important it is to keep your metabolism going. Eating protein every 2 to 3 hours is key. I especially love my Breakfast,lunch and dinner meals . As a mom, it’s easy to feed the kids and only take a few hand fulls of whatever is near and call that lunch. I end up being even more hungry when I don’t just sit down and feed myself.
Adding the pasta gives me my carb fix. Otherwise, I won’t get full and will be stuffing my face an hour later. We always have pasta in the fridge from making it for my kids. You can also add whole wheat of course. When I have spinach in my fridge I throw in a hand full of that too… My sweet mother in law still had some fresh tomatoes that she gave me last week … I am just livin it up with the juicy flavor they offer. This takes less than 5 minutes to prepare and is so satisfying.
1 cup shredded rotisserie chicken
1 small tomato chopped
1/2 cup pasta
Balsamic Vinaigrette dressing
salt/pepper to taste
*Heat up for 40 seconds and WALLA! It’s seriously the best.
