Elegant Wild Rice Soup

This is so flippin GOOD!  You can make it any way you’d like.  I got it out of the “Delectable Dishes” cook book.  I of course changed it up a bit to my liking 🙂  It’s very easy to make but does take about a half hour to prep.  My whole family just loved it.  I got a “This is SOOO good,” comment from my hubby about 5 times.  That always makes a woman happy.  Let’s be honest…  Not every night is a slam dunk dinner.  I promise you this night will be.  I added a ton of fresh veggies to it as well.  Don’t be scared of the lengthy recipe… It is very easy The flavor is so rich and delicious. I can’t wait to make it again.
  • 5 cups water (or 6 if you add tons of veggies like I did)
  • 1 heaping Tablespoon of chicken bullion powder
  • 1 pkg. Uncle Ben’s original long grain Wild Rice (seasoning packet and rice)
  • 1 Tablespoon dried onions
  • 1 can cream of chicken soup (option: low fat)
  • 1 (8oz) cream cheese cubed (I did low fat)
  • 2 chicken breasts (sauteed or boiled) or I added fresh rotisserie chicken/just eyeball it
  • *salt and pepper (don’t forget)
  • slivered almonds
  • Choose preferred veggies (such as fresh or canned mushrooms, diced zucchini, carrots, yellow squash, yellow onion, broccoli, cauliflower, green peas etc.  For fresh veggies-boil until tender then add to soup.  *I used some mini carrots, a small zucchini, squash, and sauteed two packages of mushrooms with garlic salt,olive oil and then sauteed a yellow onion as well.
1- prep all your veggies and set aside
2- bring to a boil water and chicken bouillon
3- add rice package and seasoning packet
4- return to a boil, then turn down heat and simmer for 10 minutes
5- add any cooked veggies
6- add dried onions and simmer another 5 minutes
7- add cream of chicken soup and heat through
8- stir in cream cheese until melted
9- add chicken and stir soup until everything is Incorporated and heated through
10- add salt and pepper with a few slivered almonds on topServe with your favorite bread for dipping!
